Day 1 of G Free

Yes, we are going gluten-free. Just for a month…well, hopefully longer if the results are positive.

Why are we going gluten-free, you might ask? A number of months ago, our friend Melissa mailed us a book that she had read, “The Fungus Link” a book all about gluten and how it contributes to a number of ailments…Crohn’s disease, arthritis, allergies, digestion, respiration, heart health, etc. Some people who have Crohn’s disease and have cut gluten out of their diet have seen really positive results. For those of you who don’t know, Josh has Crohn’s disease. Most Crohn’s patients experience inflammation of the small intestine. Josh doesn’t. His plays out in extreme joint inflammation and pain. He technically has Crohn’s disease but in real life, it looks more like rheumatoid arthritis.

Anyway, both of his problems could possibly improve by cutting gluten out, so, it’s worth a try.

Today is day one. I’m going to blog about it every once in a while over the next month as a sort of accountability. So, here’s what we ate today. It’s hard but not as hard as I thought it would be.

Breakfast:
eggs, bacon and coffee
Lunch:
Tillamook yogurt, chips and salsa (yeah, this was random) I’m still trying to figure lunch out. All I know what to eat for lunch is sandwiches!
Snack:
iced white chocolate mocha. (I hope that was gluten free…I’m assuming it is)
Dinner:
slow cooked chicken tacos

Things I will miss eating: cookies, biscuits, pancakes, bread, rolls, cake….ahhh.
